Martiniquan Rum
Like all Rums, the Martiniquan version of this spirit is produced from sugar cane. Sugar Cane is one of the main Creole cultures in Martinique, due to the exceptional Caribbean climate, which contributes to its culture. Originally, Martiniquan Rum was called kill devil, guildive or tafia. The first Martiniquan Rum was produced during the 17th Century.
Martiniquan Rum is mainly reputed for its production of Agricultural Rum, locally known as Rum Z’habitant. Agricultural Rum is a sugar cane alcohol, produced from the fermentation and distillation of the juice of sugar cane with vesou. Agricultural Rum not only comes from Martinique but also from the French Caribbean and other foreign countries.
In Martinique, Agricultural Rum is the result of the distance between the sugar cane producers and the sugar factories. Through necessity, the juice had to be distilled and fermented directly at the sugar cane producers. However, Martiniquan Rum is the only rum to have a label of designation of origin (AOC – Agriculture d’Origine Contrôlée) which was obtained in 1996.
The addition of the term “agricole” to IGP means that the rum is only produced with sugar cane juice. If the term “de sucrerie” is added to IGP, then the rum only comes from treacle, in the absence of the terms “Agricole” or “de sucrerie”, the rum can be made with a mixture of sugar cane juice and treacle.
