Agricultural rum
Agricultural rum is a spirit which is produced from pure sugar cane juice, also called vesou. Agricultural rum is different from industrially produced rum, which is produced from the fermented waste of the sugar or treacle industry. Agricultural rum is considered by the purists as the best quality due to its exclusive composition of pure sugar cane juice which is the noble part of sugar cane. The first productions of agricultural rum were made in the 17th Century when the French settlers who developed sugar cane crops, discovered that sugar cane juice fermented by the heat, enabled the production of alcohol. Initially sugar cane was only used to produce sugar. The sugar factories, to improve their income, incorporated therefore the distilleries to produce agricultural rum. Père Labat was the first person to have produced agricultural rum. Originally, agricultural rum was called “z’habitant”. It can be noted that nowadays agricultural rum is produced in greater quantities than industrial rum.
Agricultural rum is mainly produced in the Caribbean and South America. Amongst the main producers of agricultural rums, is France with the Reunion, Guadeloupe, French Polynesia, French Guyana and Martinique. (Martinique is the only territory to have an AOC). Agricultural rum is also made in Asia with Thailand, Vietnam, Laos or Cambodia and in the Indian Ocean, Mauritius. All these countries have a territory which is suitable for sugar cane which is the main ingredient in agricultural rum.
The stages in the elaboration of Agricultural Rum:
- Harvesting the sugar cane
- Crushing the sugar cane to obtain the pure sugar cane juice.
- Fermenting the pure sugar cane juice with the yeast.
- Distilling the “sugar cane wine” obtained through the fermentation.
- Diluting the rum to produce White Agricultural Rum or Dark Agricultural Rum or Aged Agricultural Rum.
Agricultural Rum can be aged in wooden casks to obtain different categories of rums:
- Dark Agricultural Rum or Paille Rum: 18 months conservation in a wooden cask
- Old Agricultural Rum (Very Old): 3 years conservation in a wooden cask
- Old VSOP Agricultural Rum (Very Special Old Pale): 4 years conservation in a wooden cask
- Old XO Agricultural Rum (Extra Old): 6 years conservation in a wooden cask
- Traditional Old Agricultural Rum: 5 to 7 years conservation in a wooden cask
- Old “hors d’âge” Agricultural Rum: 8 to 12 years conservation in a wooden cask.
- Old Vintage Agricultural Rum: 15 years and over in a wooden cask. Vintage rum can be aged up to 70 years in a wooden cask.
