Discovering Dark Rum
Dark rum is an alcohol which is aged for about 18 months in oak barrels. Rum is a spirit made from the distillation of pure sugar cane juice which was first produced in the 17th Century in the French West Indies. Dark Rum can be produced from Agricultural Rum, made from the composition of pure sugar cane juice, or from Traditional Rum which is produced from treacle. By way of comparison, Dark rum is an intermediate category between White Rum and Aged Rum. White Rum is not aged in wooden barrels. As for Aged Rum it is aged for several years, therefore much longer than Dark Rum.
To be precise, Dark Rum is a White Rum aged between 12 and 18 months. A White Rum aged for only a year is considered as a Brown Rum. Some Dark Rums can be aged for 36 months in a wooden barrel. Beyond 36 months ageing, the rum is considered to be “Aged”.
Dark Rum can be conserved in Barrels which previously stocked Aged Rum or Whisky. This gives some Dark Rums an atypical aroma. Dark rum is known to have woody and spicy aromas. For the more original Dark Rums, vanilla, almond, citrusy, caramel or even coconut aromas may be perceptible.
Made of sugar cane, Rum came from the production of sugar cane in the West Indies. It was in 1694, to be precise, that Père Labat had the idea of distilling sugar cane to make alcohol. It was in the 18th Century that the first traces of Dark Rum can be found. Dark Rum was produced for the first time by Jacques Bally who stocked Rum in wooden barrels for several months. Gradually, the aged rum took the name of Dark Rum. Other names like Golden Rum or Paille Rum can designate Dark Rum. In the English-speaking countries, it is translated as Rum Gold.
It is interesting to note that Dark rum possesses a lower alcohol content than ordinary Rum. This is because some of the alcohol evaporates during its conservation in a wooden barrel. This is the reason why Dark rum is sweeter to the palate than ordinary Rum. It is considered to be sweeter than White Rum.
Dark Rum is consumed as an aperitif or a liqueur in starred gastronomic restaurants. As an aperitif, Dark Rum can be used for making cocktails like ti punch, Cuba libre, ginger fever, mai tai or mojito. Dark rum is sometimes used to make Rum arrangements due to its lower alcohol content than White Rum. Dark Rum with its sweet flavour, is an ideal accompaniment to deserts.
Dark Rum can be vintage.
