Vermouth
With an alcohol content which ranges from 14° to 22°, Vermouth is not, contrary to popular opinion, a spirit, it is a flavoured wine. To be more precise, Vermouth is called an A.B.V., which means an aperitif made from wine, (aperitif à base de vin). The main ingredient can be either red wine or white wine. Bitter plants and tonics are added to the wine to flavour this precious drink.
Vermouth can therefore be made with wine, other alcoholic drinks, and different plants. As for the main ingredient wine, white wine is more often used to make Vermouth, as it is more acidic and is better for macerating plants and therefore extracting their aromas to make White Vermouth. Obviously, Red Vermouth is produced with red wine or white wine which has had sugar or caramel added to it. Other alcohols added to the wine may include grape mistelle, Eau-de-Vie, Absinthe (small and big Absinthe) or liqueurs. The plants used in the production of Vermouth are absinthe, artemisia, cardamom, ginger, sloes, achillea, cascarilla, cloves, vanilla, quinine bark, sweet flag, blessed thistle, hyssop, savory, aloe, colombo, iris, sage, angelica, coriander, marjoram, elderberry, Peruvian Balsam, rose hip, cola nut, thyme, camomile, wormwood, bitter orange, cinnamon, gentian, and oregano.
There are several types of Vermouths:
- Italian Vermouth from the Turin Region: these are wines with mistelles from the Southern Plains of Italy added to them. The Italian Vermouths from Turin are known for their sweetness. Italian Vermouths have brick red or golden tones. The majority of Italian Vermouths are red.
- French Vermouth: Amongst the French Vermouths, there are de Marseillan Vermouths (Noilly Prat), and Thuir (Byrrh). These French Vermouths are made from dry white wine (80%) from the bourret, clairette and picpoul grape varieties. The French de Marseillan Vermouths are dry and have a golden colour. Another French Vermouth, Lillet is a Vermouth from Bordeaux, the vin d’epines, the Savoyard Vermouth, which comes from Chambery, it is produced from wines from Savoie and more than 30 alpine plants and herbs. Finally, amongst the French Vermouths, the Mattei Cap Corse is a Vermouth which, as its name suggests, comes from Corsica. It is made with mistelle, quinine, and several exotic plants. Most of the French Vermouths are white.

The History of Vermouth
Historically, Vermouth is a fortified wine which was first produced in Italy in 1786 by Antonio Benedetto Carpano in Turin. The inspiration for Vermouth came from a German aperitif made with wine and Absinthe, the German word for Absinthe translates as “wermut”. The Piedmont region of Italy is therefore the region where Vermouth was historically produced. France is also a big producer of Vermouth.
